GARY'S HEALTHY LOW CARB FISH TACOS.....Build your own tacos

Ingredients (makes about 8 stuffed tacos!)

Low Carb Tortillas (3 net carbs each)
1 lb. Orange Roughy
1/2 Head of Cabbage
3 Limes
1/3 Cup Shredded Mexican Cheeses
1/2 Cup non-fat Salsa
Lots of Cilantro
1/2 Avocado
1 small tomato
2 Tbsp Mayonnaise
Jalapeno Dusting powder
1/4 cup water
paprika
bit salt
pepper
optional: tabasco (kick it up a notch!)

Marinate the Orange Roughy with the juice of 2 limes for about an hour
Sprinkle Paprika all over the fish
Spray a piece of foil with Pam, and place the fish, with the liquid into the foil and close the foil.
Place on a preheated-medium hot BBQ. Cook for 10 minutes, or until opaque.

In the meanwhile,
Shred the cabbage (place in serving bowl)

Chop the cilantro (place in serving bowl)

Squish 1/2 the avocado, put 3 Tbsp of salsa into it, some lime juice, jalapeno1 dusting powder and some cilantro, salt and pepper (place in serving bowl)

Take the Mayonnaise and mix slowly with the water
Squish the tomato juice into the mayo mix and then throw out the skin
add Jalapeno Dusting Powder
salt pepper (place in serving bowl)

Take the cheese...(place in serving bowl)
When fish is just about done...throw the tortilla's into the top rack of the BBQ wrapped in a damp towel to warm for 2 min.

When all is done, build a taco!

Gary's favorite way is this order: 
    Take the Taco..smear a touch of avocado
    add fish
     tiny amount of cheese
    salsa
    cilantro
    shredded cabbage
    1 Tbsp mayo mix
    Add a couple drops of Tabasco Baby!!!

Enjoy ice water with the juice of a slice of orange in it...and a touch of mint.
